Tacos and tequila at Tequila Daisy, a cheerful Mexican-inspired restaurant in Barangaroo

“The tequila daisy cocktail actually came about by accident. A bartender in Tijuana made a gin cocktail and grabbed the wrong bottle, ”says Rebecca Lines Leaflet. Lines and her husband Hamish Ingham are behind the new Mexican-inspired diner Tequila Daisy, which replaces their vermouth-heavy barangaroo restaurant Banksii. The couple also started the groundbreaking Surry Hills Restaurant Bar H, which they sold in 2017.

The sparkling, lemony tequila daisy cocktail is the predecessor of margarita (“margarita” is Spanish for daisies). “There is a whole family of cocktails called ‘daisies’. It’s kind of a citrus plus soda spirit, ”says Lines.

The restaurant’s eponymous rendition consists of triple sec, lime, soda, bitter, and tequila, but there are many other versions on the menu. Some are made with tequila, a blue agave spirit found in the southern Mexican state of Jalisco, while others are based on mezcal, a smoky spirit that can be distilled from any agave variety other than the blue variety. As with Banksii, Tequila Daisys’ drinks menu is extensive: mezcals and tequilas occupy four pages, and there is a long list of spirits, wines, and beers.

Lines and Ingham planned to open Tequila Daisy in August, but the lockdown forced them to delay. So Ingham took the opportunity to test the taco menu by serving a selection to take away.

“We make a pulled pork shoulder that is cooked slowly overnight with many different chilies and spices, which is reduced to a thick sauce and refined with a roasted pineapple salsa,” says Ingham.

There’s also chicken taco with salsa rojo and a light pico de gallo; Beef brisket with mole refined with fresh chimichurri; and roasted heirloom carrot with red cabbage salad and red onion pickles. Ingham experimented with specials during the lockdown, including a lobster taco and a grilled flank steak bone marrow taco, which he says could both make a comeback.

Tacos make up a large part of the menu, but there are also plenty of main courses and shared plates that blend Mexican flavors and cooking techniques with Australian produce. Grilled Fremantle octopus is served with chopped Mexican chorizo ​​and salsa verde, and Wagyu flank steak is served with mole, Spanish padrón peppers, and native pepper berries.

Tequila Daisy takes full advantage of his waterfront space, with sun-yellow parasols shading sky-blue picnic tables outside. Inside, a long bar dominates the space, while the sophisticated terrace restaurant is a nod to the more formal ambience of Banksii. The couple is happy about the change.

“Banksii has been for five years. Rebecca and I like challenges. There’s nothing down here that represents Mexican cuisine, and we thought Barangaroo needed something light, fun, and exciting, ”says Ingham.

Sydney seems excited; Ingham says they have been inundated with group bookings. After lockdown stalled opening plans, the couple are relieved that people are coming back.

“These bookings feel like a lifeline. We got great feedback on the new concept and it’s fabulous. It seems like things are going to be all right again, ”says Ingham.
